در جلسات هیئت مدیره خانه ایران اکثرأ گفتگوها در این زمینه است که از چه طریقی میتوانیمتماس خود را با ایرانیان منطقه حفظ کنیم و درمشکل گشاييها مدد رسان باشیم. همیشه به اینبن بست میرسیم که داوطلب به تعداد کافی نداریمو در بسیاری از موارد از تخصص لازمبرخوردار نیستیم. با این حال با وجود هموندانمتخصص قادر خواهیم بود در حد معقول بهیاری بشتابیم. گاهی اوقات تخصص چندانی هملازم نیست. مثلأ برای "غریب شهر" که بایددوباره زندگی را از صفر شروع کند همانتجربه سالها در این "لامکان" بودن میتواند موثرباشد. بیاد ماجرایی افتادم که آنرا با عنوانعرفان فرنگی برایتان بازگو میکنم.هویج، تخم مرغ، و قهوه... بعد از این هرگزنسبت به فنجان قهوه خود بی تفاوت نخواهیدبود.زن جوانی نزد مادر خود رفت و سر شکایت اززندگی خود باز کرد و مشکلات را بازگو میکردو به این نتیجه رسید که زندگی بسیار سختاست و نمی داند چگونه باید ادامه دهد. ازبگومگو ها خسته شده بود و مشکلات یکی پساز دیگری روح او را آزرده کرده بود و معتقدبود هنوز یک مشکل حل نشده، مشکل دیگریسر بر میاورد.مادر او را به آشپزخانه برد و سه ظرف را پراز آب کرد و آنها را روی شعله قرار داد تا آبهابه جوش آمدند. در ظرف اولى چند هویجانداخت و در دومی یک تخم مرغ و سومی رابا پیمانه ای قهوه مخلوط کرد و در سکوت کاملگذاشت که بجوشند.در حدود بیست دقیقه بعد شعله ها را خاموشکرد و با قاشقی هویج ها را در آورد و آنرا درظرفی دیگر ریخت، بعد تخم مرغ را بیرونآورد و آنرا هم در بشقابی گذاشت، بعد قهوه راهم بهم زد و در فنجانی دهان گشاد ریخت. بعدرو کرد به دختر و گفت "بگو ببینم چه میبینی؟"دخترک پاسخ داد " هویج، تخم مرغ، و قهوه!"مادر از او خواست تا نزدیک تر برود و هویجها را لمس کند و دخترک چنین کرد و اظهارداشت "نرم شده اند". مادر سپس از او خواستتا تخم مرغ را بشکند. پس از جدا کردن پوسته،وی با تخم مرغی سفت روبرو شد و گفت "سفتشده است". سرانجام مادر از دختر خواست کهجرعه ای از قهوه را بنوشد. لبان دختر به خندهشکفت چون عطر و طعم قهوه مطبوع بود.آنگاه دختر پرسید "خوب مادر چه چیزی رامیخواهی ثابت کنی؟"مادر گفت همه اینها در یک موقعیت سخت وگزنده قرار داشتند. بعبارت دیگر همه در آبجوشانده شدند ولی هر کدام عکس العمل خاصیاز خود نشان دادند. هویج خیلی قرص و محکمبود و وقتی با آب جوش روبرو شد نرم وانعطاف پذیر خارج گشت. تخم مرغ شکننده بودو پوسته سخت خارجی مایع لرزان داخلی اش راحفظ میکرد، اما پس از جوشش در آب درونشسفت و محکم شد و نیازی به پوسته بیرونینداشت. ولی دانه های آرد شده قهوه ازخصوصیات یگانه ای برخوردار بود که توانستبر آب جوش اثر کند و ماهیت آنرا تغيير دهد.حال تو کدام یک از اینها هستی؟ زمانی کهسختی روی میاورد، چگونه پاسخ میدهی؟ آیا توهویجی یا تخم مرغ و یا دانه قهوه؟در این مورد فکر کن که من كدامم. آیا منهمانند هویج سخت و استوارم اما در برابر شدایدمقاومت را از دست میدهم و ضعیف میشوم؟يا من همانند تخم مرغ دارای قلبی نرم و باانعطافم ولی در برابر شداید سخت میشوم؟ آیامن دارای روحی نرم و ملایم هستم که با اندکمشکلی از قبیل جدائی، گرفتاری های مالی،مرگ عزیزی، یا گرفتاری های دیگر سخت دلمیگردم؟ آیا پوسته خارجی ام تغییری نمیکندولی از درون سخت دلم؟یا اینکه من همانند دانه قهوه هستم که آب داغ رادگرگون میکنم؟ درست در همان شرایط سختیکه درد آفرین است. آب چون داغ میگردد عطرو مزه مرا بیشتر و بهتر میکند. اگر تو شبیه قهوهباشی، در زمان سختی ها در بد ترین شرایط،بهترین موقعیت را برای خودت فراهم میکنی.در عین مشکلات، چگونه رفتار میکنی؟ مثلهویج، تخم مرغ، یا قهوه؟امیدوارم که آنقدر شادی برایت فراهم باشد کهشادمان باشی، آنقدر مشغله داشته باشی که تو راقوی تر کند و آنقدر غصه که تو را انسان نگاهدارد و آن قدر امید که شادمانت کند.خوشبخت ترین مردم آنها نیستند که همه چیز دراختیار دارند، بلکه آنهائی هستند که حد اکثربرداشت و استفاده را از موقعیت ها می کنند.روشن ترین آینده بر مبنای گذشته های فراموششده است. پیشرفت در زندگی وقتی امکان پذیراست که شکست ها و دل شکستگی های گذشتهرا پشت سر بگذاری.وقتی تو متولد شدی، تنها تو گریه میکردی و همه اطرافیان خندان بودند. به نحوی زندگی کنکه در پایان تو فردی باشی که خندانی و همه دراطراف تو گریان.محمود معلميان

امسال دومین پیک نیک خانه ایران را در روزیکشنبه هفتم ماه اوت برگزار کردیم که البته هوایاری کرد و با وجود گرما شرکت کنندگان ازدیدار یکدیگر شادمان شدند. پیش از ظهر کهداوطلبان خانه ایران برای آماده کردن محيطرفتند گروهی را دیدند که در محل رزرو شده ماجا خوش کرده اند و مشغول پذیرایی از خودهستند. البته تیغ ما به آنها کارگر نیافتاد چونکارکنان پارک بدون توجه محل را به آنها داربودند. بالاخره پس از مقداری دوندگی و دیدنافراد مختلف به آنها فهماندیم که "بابا ما اینجا رااز یک سال قبل برای چنین روزی رزرو کردهایم". بلاخره آن گروه را با غرو لند فراوان بهگوشه ای دیگر فرستادند و ما مشغول تمیزکاری و روبراه کردن محل شدیم. یاران از راهرسیدند و بساط خود را بر روی میزهای پیکنیک پهن کردند. در ساعت سه و نیم بعد ازظهر (با نیمساعت تاخیر) اعلام شد که شرکتکنندگان در مسابقه آشپزی دست پخت خود را بهمسئولین تحویل دهند تا بوسیله داوران خوشاشتها محک زده شود. فرمهای لازم در اختیارآنان بود تا ابتدا به تزئین غذا نمره دهند تا بعد بهمزه آن برسند. آنچه مسلم است آنکه تزئیناتروی غذا بعلت حمل در اتومبیل و تکان تکانخوردن های متناوب بهم ریخته بود که بسیاریدوباره دست بکار شدند و غذا ها را از نو بزککردند. باری داوران باد به غبغب انداخته همانندناپلئون بناپارت و ملکه ویکتوریا دست بر پشتاز جلو صف غذاهای زبان بسته گذشتند و بهرکدام نمره ای دادند. آنگاه نوبت به آزمایش مزهرسید. قاشق بدست بجان خوراک افتادند و همانندبررسی کننده غذا ها در رستورانهای نیویورکو شیکاگو پس از خوردن لقمه ای "اوهوغلیظی تحویل داده و نمره ای به غذا میدادند.بعد هم که کار آنها تمام شد از افراد خواستند کهبه باقی مانده غذا ها حمله کنند. در طرفة العينيظروف خالی شد که نمود از آن داشت که حتمأخوشمزه بوده است.باری تعداد شرکت کننده شش نفر بود که به سهنفر آنها جوایزی تعلق گرفت. برندگان عبارتبودند از:نفر اول خانم منیژه احدینفر دوم خانم حوريه عارفينفر سوم آقای محمود معلميانبنا بر سابقه دیرینه ما دستور پخت نفر اولمسابقه را برای شما مینویسیم.کشک بادمجان برای ده نفرمواد لازم:- عدس یک لیوان- لوبیای سفید یک لیوان- گوشت یک پاوند- بامجان ٥ عدد متوسط- پیاز متوسط سه عدد سرخ کرده- سیر تازه یک بوته- گردو خرد شده یک لیوان- نعنا داغ نصف لیوان- کشک یک لیوان- خامه یک لیوان (sour cream)- نمک و فلفل به اندازه کافیطرز پخت: گوشت و لوبیا و عدس و نیمی ازپیازداغ را با سه تا چهار لیوان آب بگذارید تاکاملأ بپزد. بادمجان ها را پوست گرفته و سرخکنید و سپس آنها را با گوشت و پیاز و عدس ولوبیا مخلوط کرده و خوب میکوبیم. آنگاه گردوخورد شده و نعناداغ و سیرداغ و کشک و خامهرا به آن اضافه میکنیم و بهم میزنیم ( توجهداشته باشید که مقداری از کشک، خامه، نعناداغ، سیرداغ، و کشک را برای تزئین کنابگذارید) و نمک و فلفل آنرا اندازه کنید و آنگاهروی آنرا با موادی که کنار گذاشته اید تزئینکنید. نوش جان.
